My secret to keeping dinner from feeling like a chore? Keep things simple. That’s why 15-minute steak bites are on repeat at my house. Two pounds of tender New York strip steak can stretch to feed an entire family, and when cubed and caramelized and packed with flavor, there’s no need for fancy pan sauces or steakhouse sides. In fact, just two extra ingredients do the trick.

This snapshot takes you through five easy steakhouse-style dinners. Each recipe begins with thick New York strip steak, flavored with two ingredients you likely have on hand. The hardest part is choosing which one to make tonight.

Honey-Balsamic Steak Bites

Whisk 2 tablespoons honey and 2 tablespoons balsamic vinegar together in a small bowl. Season 2 pounds thick-cut New York strip steaks cut into 1-inch cubes with 1/2 teaspoon kosher salt. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering. Add steak cubes and sear until browned, flipping halfway through, 6 to 8 minutes total. Add honey-vinegar mixture and cook 1 minute more. Remove from heat and garnish with 1/4 cup sliced scallions

Zest and juice 2 limes until you have 1 tablespoon zest and 2 tablespoons juice. Season 2 pounds thick-cut New York strip steaks cut into 1-inch cubes with 1/2 teaspoon kosher salt. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering. Add steak cubes and sear until browned, flipping halfway through, 6 to 8 minutes total. Add lime juice and 2 teaspoons chili garlic sauce or paste and cook 1 minute more. Remove from heat and garnish with lime zest.

Brown Sugar Bourbon Steak Bites

Whisk 2 tablespoons packed light brown sugar and 2 tablespoons bourbon together in a small bowl. Season 2 pounds thick-cut New York strip steaks cut into 1-inch cubes with 1/2 teaspoon kosher salt. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering. Add steak cubes and sear until browned, flipping halfway through, 6 to 8 minutes total. Add brown sugar and bourbon mixture and cook 1 minute more. Remove from heat and garnish with 1/4 cup chopped fresh parsley leaves.

Smash 4 tablespoons softened unsalted butter and 1/4 cup chopped fresh herbs (like rosemary, thyme, and/or parsley) together in a small bowl. Season 2 pounds thick-cut New York strip steaks cut into 1-inch cubes with 1/2 teaspoon kosher salt. Melt 4 tablespoons unsalted butter in a large skillet over medium-high heat. Add steak cubes and sear until browned, flipping halfway through, 6 to 8 minutes total. Add herb butter and 1/2 teaspoon freshly ground black pepper and cook 1 minute. Remove from heat and garnish with more chopped herbs, if desired. 

Sweet and Spicy Steak Bites

Season 2 pounds thick-cut New York strip steaks cut into 1-inch cubes with 1/2 teaspoon kosher salt. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering. Add steak cubes and sear until browned, flipping halfway through, 6 to 8 minutes total. Add 2 tablespoons honey and 1 thinly sliced small jalapeño and cook 1 minute more. Remove from heat and serve with lime wedges.
