Review: Copalli Cacao Rum

We tasted the unique expressions of Belize’s Copalli rum again in 2020. The model is now increasing, with a chocolate-flavored (white) rum now out there.

Copalli Cacao is sustainably produced on the Copal Tree Distillery, located within the coronary heart of the tropical rainforest in Southern Belize. It makes use of solely 4 substances –natural, heirloom sugar cane, yeast, cacao nibs grown, dried & roasted on the distillery, and pure water collected from the cover of the Belizean Rainforest.

Let’s style.

Chocolate-flavored rum often means one thing brown, low-proof, and super-sweet. Copalli Cacao is none of these, a transparent spirit that’s sharp on the nostril with the petrol-laced pungency of a traditional white rum — inexperienced herbs, underbrush, with a buttery sweetness that doesn’t fairly telegraph chocolate. These notes are reserved for the palate, which melds a bittersweet, cocoa-nib-like character with that fuel-heavy pungency paired with a lightweight, brown-sugared sweetness. Hints of butterscotch and vanilla cake frosting give the end a little bit of a carry, however it by no means fairly melds into the wealthy, chocolate-laden expertise I actually wished.

80 proof.
