Place 2 1/2 cups all-purpose flour, 1 tablespoon granulated sugar, and 1 teaspoon kosher salt within the bowl of a meals processor fitted with the blade attachment. (Alternatively, use a big bowl and pastry cutter or fork.) Pulse a number of instances to mix. Reduce 2 sticks chilly unsalted butter into 1/2-inch cubes and scatter over the flour combination. Pulse till the combination resembles a rough meal, 10 to 12 pulses. Add 1/2 cup ice water and pulse till the dough varieties a cohesive mass, 10 to 18 pulses. If the dough is simply too dry and doesn’t come collectively, pulse in a further tablespoon ice water.
