Mince or finely grate 2 garlic cloves and place in a big bowl. Strip the leaves from 2 sprigs recent rosemary, finely chop (about 1 tablespoon), and add to the bowl. Add 1/3 cup olive oil, 1/4 cup pink wine vinegar, 1/4 teaspoon black pepper, and the remaining 1 teaspoon kosher salt. Whisk properly to mix and emulsify.
