Peel and finely grate 1-inch recent ginger and finely grate 1 garlic clove. Place in a medium bowl. Add 1/2 cup pure creamy peanut butter, 3 tablespoons soy sauce or tamari, 3 tablespoons rice vinegar or lime juice, 3 tablespoons water, 2 teaspoons maple syrup, and 1 teaspoon toasted sesame oil. Whisk till the sauce is easy. Skinny with further water, 1 tablespoon at a time, as wanted.
