Pensador creates Espadín mezcal for cocktails

Mezcal model Pensador has debuted its second expression, a bottling developed for mixing that’s made with 100% espadín agave.

Pensador Espadín is produced by father-and-son mezcaleros Atenógenes and Jose García for the Pensador model.

The brand new expression makes use of espadín agave grown completely in Miahuatlán in Oaxaca, Mexico. It’s made in line with mezcal artesanal specs, and is double distilled in a 300-litre copper pot nonetheless.

Its ‘approachable’ flavour profile is described as earthy, with herbaceous notes of rosemary, thyme and juniper, plus a floral end with camomile and honeysuckle. The 48% ABV liquid was developed with cocktails in thoughts, although it is usually advisable as a sipping spirit.

To focus on the mezcal’s mixable nature, Pensador tapped bartender Wealthy Hunt, beforehand of Mint Gun Membership in London, to design riffs on three basic serves: the Margarita, Negroni and Paloma.
